In the "Ethereal: Export as "Plain Text" File" dialog, on the right, 
there's a "Packet Format" section.  It has two parts, one with three 
check boxes, "Packet summary line", "Packet details" (with a 3-item 
"radio button", with "All collapsed", "As displayed", and "All 
expanded", under it), and "Packet bytes", and one, below a dividing 
line, with "Each packet on a new page".

There should be similar options in the "Print" dialog.
