which transport are you using: SS7 over IP (Sigtran) or TDM?

If you are using SS7 over IP you can just use Ethereal in the same way as with using any other IP protocol,

If you are using SS7 over TDM (E1/T1/J1), please refer to the wiki page: http://wiki.ethereal.com/CaptureSetup/SS7 or http://www.ethereal.com/lists/ethereal-dev/200510/msg00125.html.
