Well, did you noticed the text2pcap tool: 
http://www.ethereal.com/docs/man-pages/text2pcap.1.html which is shipped 
together with Ethereal?

You may have to do some tweaking of the textfile before you can use it 
as input for text2pcap.

I've never used that tool myself, so I can't give you more advice on this...
